When we are not programming at E-Z-Software we like to relax with a nice snack. Here is our featured recipe for delicious Biscotti: Almond-Chocolate Chip Biscotti1 ¼ cup white flour 1 ¼ cup whole wheat flour 1 cup sugar 1 tsp baking powder. ½ tsp salt 3 eggs ¼ tsp ground cinnamon ¼ tsp ground cloves 2 Tbsp ground ginger 1 cup chopped almonds 1 tsp almond extract 1 cup semi-sweet chocolate chips Beat eggs slightly and add almond extract. Add all dry ingredients and mix thoroughly. Chill dough at least ½ hour. Form into slightly flattened logs and place several inches apart on greased cookie sheet. bake for 25 minutes at 350 °F in preheated oven. Cool approximately 10 minutes. Cut logs into ¼ inch cookies using serrated bread knife or electric carving knife. Toast cookies 5 minutes per side at 350 °F. Variation: Replace some of the almonds and chocolate chips with diced crystallized ginger and dried apricots.
